1. Mexican Street Corn Salad
Serves 4-6
Ingredients
- 4 ears of fresh corn, shucked and cooked (roasted steamed or grilled)
- 1 red bell pepper, small diced
- 3 sprigs of green onion, thinly sliced
- 1 handful of cilantro, chopped
- Juice of 1 large lime
- 1 tsp agave or honey
- 1 Tbsp olive or avocado oil
- ½ cup cotija cheese or queso fresco, crumbled
Instructions
Mix all ingredients together and refrigerate until ready to serve. Lasts up to 7 days
2. Blueberry, Grilled Peach & Strawberry Champagne Goat Cheese Salad with Fig Balsamic Reduction
Serves 4-6
Ingredients
- 1, 8 oz package of prepared mixed greens
- 2 ripe peaches, chopped
- ½ cup fresh blueberries
- 1, 8 oz package strawberry champagne goat cheese or feta
- 1 medium lemon, juiced
- ¼ cup olive or avocado oil
- 1 bottle fig or regular balsamic reduction
Instructions
1. In a large bowl, toss together the mixed greens, lemon juice and oil until well combined.
2. Plate up mixed greens and top with the peaches, blueberries and goat cheese.
3. Drizzle each salad with balsamic reduction and serve immediately.
3. Strawberry Caprese Pasta Salad
Serves 4-6
Ingredients
- 1 box of rotini or orecchiette pasta, cooked and cooled
- 1 small container of fresh strawberries, pitted, halved and sliced
- 1 container of mini mozzarella balls (Ciliegine), halved
- 3 sprigs of basil, chopped or julienned
- Salt and pepper TT
- ¼ cup of your favorite lemon/ herb vinaigrette (I like Gotham Greens Lemon Basil Vinaigrette)
- 3 Tbsp. balsamic glaze
Instructions
In a large bowl, toss together all of the ingredients. Chill until ready to serve. When serving, garnish with extra chopped basil or strawberries and a drizzle of balsamic.
