This month’s featured recipe comes from The Mayberry Cookbook: Ange’s Apple Bread.
It was also the final recipe in my challenge to prepare four recipes in one day! After a full day of measuring, mixing, cooking, and tasting, this apple bread was the perfect finish. It is warm, comforting, lightly spiced, and filled with tender apples and crunchy nuts.
It makes two loaves, so you can serve one during your gathering and save the other for breakfast the next morning—assuming it lasts that long.
Prep Time: 20 minutes
Cook Time: 1 hour
Servings: 2 loaves, approximately 16–20 slices
Ingredients:
- 2 cups granulated sugar
- 1 cup vegetable oil
- 3 large eggs
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 2 teaspoons vanilla extract
- 2 cups peeled and chopped apples, such as Granny Smith
- 1 cup chopped walnuts or pecans
Instructions:
- Preheat the oven. Preheat your oven to 325°F. Lightly grease two standard loaf pans.
- Mix the wet ingredients. In a large mixing bowl, beat together the sugar, vegetable oil, and eggs until smooth and well combined.
- Combine the dry ingredients. In a separate bowl, sift together the flour, salt, baking soda, and cinnamon.
- Make the batter. Slowly add the dry ingredients to the wet mixture, stirring just until incorporated. Avoid overmixing.
- Add the apples and nuts. Fold in the vanilla extract, chopped apples, and nuts. The batter will be thick.
- Bake. Divide the batter evenly between the prepared loaf pans. Bake for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
- Cool and serve. Allow the loaves to cool slightly before removing them from the pans. Serve warm, at room temperature, or lightly toasted the next morning.
