Baking with Mom: A Childhood Tradition
Every family has a secret recipe, and ours is no different. It’s not just a recipe, but a promise handed down through generations: the promise of comfort, love and joy in every bite. Baking is a language all its own—a love language, to be exact. When you bake for someone, you're not just giving them a treat; you're sharing a part of your heart. In my family, we've always used baking to say 'I love you,' and this week, we're saying it with 2 loaves of banana bread." One loaf has my special touch added to it and the other loaf has my mom’s special touch added to it. Both have very different flavors, but are equally filled with the same amount of love that we both shared in the kitchen.
Mom’s Zesty Oat Flour Banana Bread with Chocolate Chips
Ingredients
- 3 ripe bananas
- 2 eggs
- ⅛ cup maple syrup
- 1 tsp. Vanilla bean paste or vanilla extract
- 1 cup oat flour
- 2 tsp. Baking powder
- ½ tsp. Salt
- Zest of 1 lemon
- ½ cup chocolate chips
- ½ cup walnuts, chopped
- Topping: 1 Tbsp. oats mixed with 1 tsp. Coconut sugar or brown sugar
Directions
- Preheat your oven to 350 degrees F. Grease a loaf pan and set aside
- Meanwhile, in a large mixing bowl, mash the bananas and mix all of the wet ingredients in with the mashed bananas.
- Add all of the dry ingredients except for the nuts, chocolate chips and topping. into the wet ingredients until well combined.
- Fold in the nuts and chocolate chips.
- Place the batter into the loaf pan and top with the oat and sugar topping. Bake for 35-40 minutes or until a toothpick inserted in the middle of the loaf comes out clean. Let cool before removing from the loaf pan and cutting.
Chef Jess’ Gluten Free Blackout Chocolate Zucchini Banana Bread
Ingredients
- 2-3 large ripe bananas
- ⅛ cup maple syrup
- ⅛ cup coconut sugar
- 1 egg
- 3 Tbsp. coconut oil
- ¼ cup black cocoa (regular cocoa can work too)
- ¾ cup gluten free all purpose flour blend
- ¼ tsp. Cinnamon
- ¾ tsp. Baking soda
- ¼ cup chocolate chips
- OptionalTopping: hemp seeds and cacao nibs
Directions
- Preheat your oven to 350 degrees F. Grease an 8x8 or 9x9 baking dish and set aside
- Meanwhile, in a large mixing bowl, mash the bananas and add the rest of the wet ingredients. Mix well.
- Add in the dry ingredients (except for the chocolate chips and topping ingredients) and mix well.
- Fold in the chocolate chips and pour batter into your prepared baking dish. Top with hemp seeds and cacao nibs if desired
- Bake for 35-40 minutes or until a toothpick inserted in the center of the banana bread comes out clean. Let cool slightly before eating.
