Minestrone And Sourwood Mountain Pumpkin Coffee Cake

Minestrone is one of those wonderfully comforting dishes that brings together fresh vegetables, hearty beans, tender pasta, and a flavorful broth.

It’s colorful, nourishing, and perfect for feeding a hungry crowd.

Serve it with warm, crusty bread for a cozy family lunch, offer it as a starter at your next dinner party, or enjoy it after a long afternoon of autumn adventures.

The best part? It’s wonderfully adaptable to seasonal vegetables and can be customized to suit different dietary preferences.

Ingredients:

  • 1 pound ground beef or mild Italian sausage (optional, for a heartier version)
  • 2 tablespoons olive oil or butter
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 large carrots, sliced or diced
  • 2 stalks celery, chopped
  • 1 medium zucchini or yellow squash, diced
  • 1 can (28 ounces) diced or crushed tomatoes
  • 4 to 6 cups beef or vegetable broth
  • 1 tablespoon Italian seasoning (or a mix of dried oregano, basil, and thyme)
  • 1 can (15 ounces) kidney beans or cannellini beans, rinsed and drained
  • 1 cup small shell pasta or elbow macaroni
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

  1. Brown the Meat (if using): In a large stockpot or Dutch oven over medium heat, brown the ground beef or sausage until fully cooked. Drain excess grease and transfer the meat to a side dish.
  2. Sauté the Aromatics: Melt the butter or heat the olive oil in the same pot. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5 to 7 minutes until the vegetables begin to soften.
  3. Simmer the Base: Stir in the zucchini, canned tomatoes, broth, Italian seasoning, and the browned meat. Bring the mixture to a boil, then lower the heat, cover, and let it simmer gently for 15 to 20 minutes.
  4. Add Beans and Pasta: Stir in the drained beans and the uncooked pasta. Keep the pot at a gentle simmer for another 10 minutes, stirring occasionally so the pasta doesn’t stick to the bottom, until the pasta is al dente.
  5. Season and Serve: Taste the broth and adjust with salt and pepper. Ladle into warm bowls and top generously with grated Parmesan cheese.

Sourwood Mountain Pumpkin Coffee Cake

A little fall sweetness to share.

This month’s featured treat from the Mayberry Cookbook Series is Sourwood Mountain Pumpkin Coffee Cake.

Imagine a relaxed Thanksgiving morning, the smell of freshly brewed coffee filling the kitchen, and everyone gathering around the table for a slice of homemade pumpkin coffee cake.

It’s a lovely addition to a fall brunch, an afternoon with friends, or a cozy family breakfast during a holiday getaway.

Pair it with your favorite warm beverage and enjoy a little sweetness before the festivities begin.

Ingredients:

  • 1 package yellow cake mix (reserve 2 tablespoons)
  • 1 cup canned pumpkin puree
  • 1 cup sour cream
  • 4 large eggs¼ cup granulated sugar
  • ¼ cup water
  • 2 teaspoons pumpkin pie spice (divided)
  • 2 tablespoons brown sugar

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 10-inch tube pan.
  3. Reserve 2 tablespoons of the dry yellow cake mix and set it aside for the topping.
  4. Combine the remaining cake mix, pumpkin puree, sour cream, eggs, granulated sugar, water, and a portion of the pumpkin pie spice in a large bowl. Beat well until smooth.
  5. Pour the batter into the prepared tube pan.
  6. Mix the reserved 2 tablespoons of cake mix with the brown sugar and the remaining pumpkin pie spice, then sprinkle this mixture evenly over the top of the batter.
  7. Bake for about 50 minutes, or until a wooden pick inserted in the center comes out clean.
  8. Cool before slicing and serving.
